Less than two weeks until Valentine’s Day! We have been busy relocating from Little Rock to Southeast Kansas where I am originally from. It has been quite a transition especially with their buying our first home. Valentine’s Day is probably going to be more of an at home experience this year while we are buying a house, renovating said house, and dealing with all those fun grown up things. At our recent trip to Walmart, I found some Ghirardelli chocolates with Valentine theme that are going to be a great addition to Valentine gift for the teachers, my kids, and my secret ingredient in the gluten free Ghirardelli filled Chocolate Cake found below! What are your plans for Valentine’s Day?

John and I have been together for 12 years. It really does seem like a lifetime! With 3 kids and all the moving, John has been my one constant. I love that we still have so many more “1sts” together! John and I have been so patient to settle down and buy a home. This year we made the biggest risk of our life together. It is exciting and scary at the same time to leave your comfort zone. With my husband changing jobs after 10 years, we are trying to be cautious about this new life. Building back up our savings is one of our top priorities.



Speaking of comfort zone Ghirardelli chocolates are one of our favorite at-home comforts. There are so many varieties to choose from!

ghirardellichocolatesquares1For the Gluten Free Ghirardelli filled Chocolate Cake, I used 16 Ghirardelli Valentine’s Impressions Chocolate Squares (milk & dark chocolate pictured above) as well as 7 Ghirardelli Dark Chocolate Squares. Please feel free to use you own Ghirardelli chocolate square combination to create your perfect chocolate cake! For the filling, I used melted Ghirardelli Dark & Sea Salt Caramel at serving time.

Gluten-free Chocolate Filled Chocolate Cake
Serves: 12
  • 23 Ghirardelli chocolate squares
  • ½ cup granulated sugar (1/4 cup Truvia)
  • 6 tablespoons unsalted butter room temperature
  • 4 large eggs
  • ½ cup gluten free all-purpose flour
  • Pinch of salt
  • Toppings:
  • additional Ghirardelli Chocolate Squares for filling
  • whipped cream
  1. Preheat oven to 400 degrees.
  2. Line 12 cup standard muffin tin cups with paper liners. In a large bowl with a mixer, beat butter and sugar on medium high until light and fluffy, about 2 minutes. Add eggs, one at a time, beating well after each addition. With mixer on low, beat in flour and salt. Beat in chocolate until just combined.
  3. Divide half the batter among the muffin tins.
  4. Bake until set about 10 to 12 minutes, let cool in pan on a wire rack, 10 minutes.
  5. For filling: Melt additional Ghirardelli Chocolate Squares (about half square per cake). Take a spoon to remove a small section of each cake to place a well of melted chocolate. Pour melted Chocolate at serving time and top with whipped cream.

    Sadly I will unfortunately be forced to work on Valentine’s Day. I work retail and we tend to alternate holidays. Probably for the best though, we can go out another night when it’s not jam packed everywhere.
