Gluten Free Pumpkin Chocolate Chip Cookies

Great cookies that are naturally gluten free! The holidays can be tricky with all the food restrictions but these allow you to offer options without buying a ton of specialty ingredients
  • ½ cup sunbutter (or your favorite nut butter)
  • ½ cup pureed pumpkin
  • ⅛ cup each of maple syrup & honey (or all of one)
  • 2 eggs
  • ½ tsp. vanilla
  • 2 tsp. pumpkin pie spice
  • ¼ tsp. salt
  • ½ cup chocolate chips
  1. Preheat oven to 350. Combine all ingredients in a large bowl.
  2. Drop by Tablespoon onto a baking sheet (I suggest parchment paper lined). Press down slightly with palm.
  3. Bake for 12-15 minutes or until golden brown.
  4. Remove from oven to baking rack to allow to cool. These need some time to allow to set after baking!
