Gluten Free Strawberry Shortcake Recipe

Strawberry Shortcake is one of my favorite desserts from my childhood. I remember going to the grocery store to pick up those delightful packages of shortcake, strawberries, and cool whip. While some things have changed since when I was a kid, my love of such a simple dessert has not! Join me in creating a fresh and gluten free version of Strawberry Shortcake. I like to use Nordic Ware Shortcake basket pan to create a similar shape to the store-bought kind.

Gluten Free Strawberry Shortcake Recipe

  • 1 stick butter
  • 1 cup powdered sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 cup cornstarch
  • 1 1⁄4 teaspoons baking powder
  1. Preheat oven to 375 degree.
  2. Cream butter and sugar using mixer.
  3. Mix in eggs and vanilla until combined.
  4. In a separate bowl, mix the cornstarch and baking powder together.
  5. Add butter mixture to cornstarch mixture until well blended.
  6. Fill the greased Nordic Ware Shortcake Pan (or muffin tin)
  7. Bake for 15-20 until they are browned and sponge-like.
