How Gluten Free Brightens our Day! Could it yours too? Featuring Udi’s Gluten Free
You can’t seem to go anywhere without hearing about gluten free this and gluten free that. When we went gluten free over 5 years ago, the convenience factor of gluten free didn’t quite exist and if it did the flavors were not right. Maybe it was due to where we were located, but we were forced to learn to adapt without the convenience foods.
I know I have discussed our reasons for being gluten free before, but for those who are new to Great Contradictions:

Hunter is how I found out I had Celiac Disease after over 20 years of not knowing. I usually could not get my weight to 100 pounds, tired all the time, constitipated, upset stomach, bloated, chronic migraines, and a lot of other symptoms that no one had ever tried to get to the root cause of. Now back to Hunter…When he was 6 months old, we knew something was wrong because he was losing weight, really tired, and who can forget 10+ poops a day. When Hunter stopped sitting up and crawling, he had reached rock bottom. I had told the doctor that I had been keeping a food diary that indicated that 15-30 minutes after grains it appeared to be issue. We had him admitted into the hospital. The problem was no one seemed to listen to me so his sweet potatoes keep coming with toast on it or something to that effect. You would have thought that was enough, but we were at a teaching school that just wanted to criticize me for my breastfeeding. We took Hunter out of the hospital after 5 days no better, but got him an appointment to one of the top Children’s Hospitals as soon as possible. Children’s Mercy knew what to do, listened to me as a concerned mother, and made us feel supported. Finally when Hunter was 9 months old, we had all the diagnosis we needed and we tried just doing gluten free for him. But I soon learned that cross contamination was going to be an issue so we jumped in head first to Gluten Free Living 100%!
What about Hunter?
Hunter is 5 and is attending kindergarten. When Hunter stays gluten free, he is the most spirited child. We make weekly gluten free play dough for the whole class, provide Hunter’s daily snack, and try to bring a class-friendly snack so he can feel that connection with his classmates.
What about Me?
I have more energy. Not as much as Hunter, but who needs that much energy! I have been able to challenge myself physically and emotionally in ways I had never imagined suffering with chronic migraines and everything else.
I am no longer:
- anemic (or dealing with any other nutritional deficiencies)
- suffering from chronic migraines
- bloated or dealing with an upset stomach
Overall our diet consists of fresh, whole foods such as meats, vegetables, fruits, cheese, whole grains, etc… I want to point out when I talk about gluten free (or any diet) that I am not necessarily referring to dieting for weight loss. I think that if we build a solid foundation of healthy eating that our health goals (whatever they may be) can be met.When dealing with an auto-immune disorder, proper nutrition is essential!
~Trust your Body~
Our body has amazing ways to help protect us and tell us things. Listen to it! Since the gluten free standards are limited, I make a point to try no more than one new food item a week. When our bodies are well, the signs of contamination sometimes take a little longer. I make a point to have Hunter tell me when anything upsets his stomach so I can do more research.
Now the problem with gluten free being everywhere and standards not very strict is that trusting brands as a Celiac is a tricky situation. Some gluten free products say they “may contain gluten” due to cross contamination or are not safe for Celiacs.

Don’t have Celiac Disease?
It doesn’t matter! Many people are finding that they feel better on a gluten free diet, and not just the people who have Celiac Disease or a Gluten Sensitivity. People have reported increased energy levels, as well as a better ability to focus. That tired slump after eating lunch? For many that “over-full” bloated feeling disappears after going gluten free. Gluten tends to be hard for your body to digest, which causes that feeling of tiredness. So when you avoid gluten, that excess energy can be diverted elsewhere, rather than your digestive system.
