Parmesan-crusted bacon and pesto grilled cheese trio {Mouthgasm} #NationalGrilledCheeseMonth

April is National Grilled Cheese Month! Whether you prefer a classic grilled cheese, or a little gourmet zing with tomato and goat cheese, the grilled cheese sandwich is comfort food at its finest. Check out Udi’s Gluten Free blog throughout April and try the gooey and delicious gluten free grilled cheese recipes they’ve toasted up.

As parents, we don’t always think of grilled cheese as a gourmet treat. However, once we went gluten free, there were so many limitations that cheese become an indulgent treat for us. Seriously, there is not much better than a good cheese and grapes! To keep up with the Earth Day theme as well as including Horizon Organics, I used a local cheese {From mycheesefactory~here in oklahoma}

 Introducing one of our favorites…

Parmesan-Crusted Bacon and Pesto Grilled Cheese Trio

{My husband refers to it as Mouthgasm. While all of these flavors together seem intimidating, they compliment each other perfectly}


  • Udi’s bread (I prefer a hearty bread to offset the indulgence so I suggest Omega Flax & Fiber or Millet-Chia Bread)
  • pesto (homemade or store-bought)
  • shredded parmesan
  • choice of 3 cheeses: Horizon Organic Sliced American Cheese, Applewood smoked cheddar, and {Oklahoma local} Smoked Bacon Ranch Cheddar (slice or shred ahead of time)
  • butter
  • Bacon (I went with peppercorn crusted bacon and it paired splendidly) cook right before you start grilled cheese bonus points for using some of the reserved drippings for grilled cheese
Step 1: Use knife to spread on butter. Then, press on shredded parmesan (or similar like asiago)

Step 2: Spread a layer of Pesto on the bottom slice of bread. Then, place in a pan on low-med low heat.

Step 3: Pile on the cheeses & bacon. Place 2nd slice of Udi’s bread on top. Cook both sides until browned!

Step 4: Enjoy!

    Love this recipe! Grilled cheese sandwiches are one of my favorite things and adding pesto and bacon just makes this so much better! Thanks for sharing!

    These sandwiches look delicious! I love grilled cheese and always use american cheese with a slices of tomatoes. These varieties will make it more interesting.
