MiMi always makes a bunny cake for Easter. She did it for her kids and now for mine. It can be made simple by using boxed cake mix, but I love using my gluten free coconut cake recipe too!
~ingredients from my gf coconut cake (gf or regular cake mix can be substituted)
~ jelly beans (YumEarth Sour Beans great allergy-friendly substitute if you have issues finding safe jelly beans)
~white paper & pink paper for the ears
1. Bake cake in round pan. Let cool. Then, cut in half.
2. Frost the top of 1 half and place second half on top. Rotate so flat side of 2 halves is on the bottom. Frost into “bunny”.
3. Once bunny is frosted, sprinkle with coconut & use jelly beans (or sour beans) to decorate the bunny!
