Gluten Free Coconut Cake Recipe: Happy Birthday to Me!


I turn 29 today!  My 6 year old asked me if I would be able to do stuff daddy is able to do since he is already 29?  Oh boy, I am not really sure where this conversation is going.  So, I ask "like what?"  Well, Dylan thinks... like reach things up high like daddy?  By the way, my husband is 6'2" & me 5'4" with my boys quickly catching up to me :) I tried not to giggle while explaining that we are all meant to be different and able to do different things.  Such as, mommy is great at cooking and daddy reaches up high for the stuff on the top shelf.  As for another birthday, I am not one to dwell on getting older.  I think that we only get better with age. Gluten Free graham cracker recipe


Of all my gluten free adaptations, graham crackers are one of my proud accomplishments.  I created this recipe back in the beginning when I didn't think the store-bought tasted right nor did the available recipes.  Graham crackers are great for anytime, but there are times when graham crackers are essential.  Such as, camping is not quite  camping without s'mores.  I know you can substitute store-bought cookies or crackers, but trust me this gluten free graham cracker recipe will make camping perfect! Gluten Free Graham Cracker Recipe Ingredients: 3/4 cup Butter 1/4 cup Honey 1 cup Brown sugar 1 tsp Xanthan gum 1+ 1/2 tsp Salt 1 tsp Cinnamon 2+1/2 tsp Baking powder 1 tsp Vanilla 1 cup sorghum flour 1 cup Tapioca flour 1 cup rice flour (brown or white) 1/4 cup Sugar mixed with 1/2 teaspoon cinnamon if desired Directions: 1.
