King Arthur Flour Gluten Free Review & Giveaway
With the gluten free standards in limbo at the moment, those requiring gluten free diets need to be much more aware of the companies providing them their food. There are many established companies taking the plunge to gluten free and King Arthur Flour is one of them. If you are familiar with the gluten free standards, you know that the guidelines are unclear. With guidelines unclear, companies are able to claim their products are gluten free. King Arthur Flour is a company who has gone through the effort to have Gluten-Free Certification Organization (GFCO) certify their line of gluten free products. On May 4, 2011, King Arthur Flour was one of the companies that attended Gluten Free Food Labeling Summitt 2011 (visit 1in133 to learn about this event). I love that a company like King Arthur Flour, that is known for being a whole wheat flour seller, is making such an impact on the gluten free world!
About their Gluten Free Products They offer eight versatile mixes that are great as is or added to your favorite recipes. Their line includes: bread mix, cake, brownies, pizza, muffins, cookies, pancake, and all-purpose flour. As stated above, they have been certified gluten free and our highly sensitive household responded fine to the addition of new products. As well as being gluten free, their gf line is free of all the common allergens. Gluten free foods tend to be more perishable than regular diets, so I was pleased that King Arthur Flour has worked hard to ensure that their gluten free mix by-products stay fresh longer (and I agree that they do).

Reaction I honestly believe that they have applied the same dedication to their gluten free products as they do with their whole wheat products. Their gluten free mixes were a great alternative to completely homemade products. My favorite part was the unexpected surprises found in the mixes such as molasses in the cookie mix, nutmeg in the vanilla muffin base, and just subtle hints of spices here and there. Those are the special touches I would do when cooking from scratch, so I felt even more at home cooking with these products. To test the mixes, I substituted them in my crepes, donuts, lemon muffins, and more of my usual recipes. At the end of the day, we all like mixes that offer us comfort and consistancy in our well-loved recipes. While the by-products were quickly devoured, I did not refrigerate as I normally would to test their theory of staying fresh longer. I completely noticed a difference in the freshness staying power. The cookie was the longest survivor, because we had made a decadent “pizza cookie” for a pizza party we were attending. It was so delicious and was still moist days after and not crumbly like other drier gluten free cookie brands. One of my favorite cookie mixes has been have a shortbread texture and even though it is delicious…King Arthur Flour has swayed me to go with the more durable cookie mix they provide since 3 boys under 6 paired with crumbly cookies is not the best combination.

Gluten Free Cooking is difficult — I hve done it for 15 years and finding a good all purpose flour is not easy. I am looking forward to trying King Arthur’s gluten free flour .
